This recipe is not that difficult. You are gonna love it! Ingredients (Serving 2 – 3) : 200g ground meat : 150g minced onion : 1tsp sugar : 1tsp soy sauce : 1tsp ketchup : 1tsp wooster Sauce (Similar to JPNS tonkatsu sauce) : Salt & pepper : Nutmeg I’m not sure if worcestershire sauce is what I’m using but we call the sauce ”Wooster sauce”. This recipe yields 6 Servings.
Ingredients
1/4 c brown sugar
1/4 c dijon mustard
1/8 c soy sauce
6 centercut pork loin chops
8 oz butter
1 finely carrot,Chopped
1 stalk celery,chopped fine
1/2 md onion,chopped fine
1 T fresh ginger,Grated
2 sprigs fresh thyme
1 T shallots,Minced
1 T garlic,Minced
1 bay leaf
3 black peppercorns
3/4 c port wine
1 lb fresh cherries,stems and pits removed
1 habanero chile,stems and seeds removed, minced
3 c rich pork (or chicken stock)
2 T cornstarch
1 T water
1 salt and pepper,To Taste
Preparation
Combine the brown sugar, mustard and soy sauce and mix well. Spread the mixture evenly over the chops and marinate, covered, in the refrigerator for 4 to 5 hours.
Melt 1 ounce of butter in a non-reactive pan and saute the carrot, celery, onion, ginger, thyme, shallots, garlic, bay leaf, and peppercorns until the onion turns golden brown. Add the port wine, heat and reduce until thick.
Add the cherries and the Habanero and cook until all the juices are extracted from the cherries. Add the stock, bring to a boil, then reduce the heat and simmer for 45 minutes.
Remove from the heat and strain through a very fine seive, pressing with a kitchen spoon to extract all the juices.

In this video, Betty demonstrates how to make a luscious Wilted Lettuce Salad. The idea for this recipe was sent to me by a friend on YouTube, Chaz. Her Great Aunt Jean (who would have been 80 this year) always made this recipe, and it was the best! Chaz sent me some instructions for putting this salad together, along with a list of ingredients. I played with the amounts a bit to come up with a combination that I think will be similar to Chaz’s Great Aunt Jean’s Wilted Lettuce Salad. Chaz, I hope you enjoy this, and I hope I did the salad in a way that would make your Great Aunt Jean proud! Leaf lettuce, as desired (I used ½ head of “leaf lettuce” from the local grocery store. You may use any soft lettuce that you like.) ½ medium purple onion, thinly sliced ¼ cup apple cider vinegar ¼ cup brown sugar salt and pepper, to taste ½ pound (about 8 slices) bacon, uncooked 1 cup water 2 tablespoons flour Wash and dry leaf lettuce, and then tear it into bite-sized pieces. Place it in a large bowl, slice ½ of a purple onion over the lettuce and set aside. In a small mixing bowl, mix ¼ cup apple cider vinegar, ¼ cup brown sugar, 1 cup water, salt and pepper to taste, and set aside. In a skillet, fry ½ pound (about 8 slices) bacon until crisp. Let cool slightly, and then crumble bacon over the torn leaf lettuce and sliced purple onions. Drain the bacon fat from the skillet, leaving about 2 to 3 tablespoons of bacon grease. Chicken wings are one of America’s favorite finger foods. The traditional chicken wing preparation that originated in Buffalo New York called for chicken wings, cayenne pepper sauce and butter. Today we’re going to put a twist on this classic chicken wings recipe with a dash of smoked paprika. Buffalo wings are also known as chicken wings, hot wings or simply just wings. I got a game to catch, so let’s get started on one of my favorite chicken wing recipes. To prepare baked chicken wings, bake the wings on a sheet pan coated with 2 tablespoons of melted butter for 45 minutes at about 425 F, turning the wings halfway through. Drain and toss with chicken wing sauce. Buffalo Chicken Wings 20 chicken wings, thawed and patted dry 1 cup all purpose flour 1 tablespoon smoked paprika 1/2 stick butter 1/2 cup vinegar based cayenne pepper sauce Peanut oil, for frying (or canola or vegetable oil) Wash thawed chicken wings and pat dry. Season to your liking with kosher salt and fresh cracked pepper. In a casserole dish, mix together the flour and paprika. Set aside. Prepare the chicken wing sauce. In a sauce pot, melt down the 1/2 stick of butter and 1/2 cup of cayenne pepper sauce. After butter is melted, remove from heat. Set fryer to 375 F, or see baking method above. Dredge chicken wings in flour, shake off excess, and add to the fryer. After 12 minutes, drain wings on paper towels. After all wings are cooked, pour over the sauce and mix well. Ingredients 2 whole mackerel, guts, head and tail removed 1 lime, juice only 4 green (unripe) bananas, ends trimmed, skin scored lengthways four times using a sharp knife salt and freshly ground black pepper ½ tsp ground allspice 3 tbsp sunflower or groundnut oil 1 red onion, roughly chopped 2 tomatoes, seeds removed, roughly chopped 2 garlic cloves, finely chopped 1 Scotch bonnet chilli, seeds removed, finely chopped 3 sprigs fresh thyme, leaves only To serve 1 tbsp chopped fresh coriander 1 lime, cut into wedges Method 1. Cut the body of each mackerel into three equal pieces. Squeeze over half of the lime juice. Chill in the fridge, covered, for 30 minutes to marinate. 2. Place the green bananas, still in their skins, into a bowl. Pour over boiling water to cover the bananas and set aside for 15-20 minutes. 3. When the mackerel pieces have marinated, place them into a medium-sized, deep-sided pan and cover with cold water. Bring the water to the boil, then reduce the heat to a simmer. Cover the pan and simmer for 6-8 minutes, or until the mackerel is tender and completely cooked through. Remove the mackerel pieces from the pan using a slotted spoon and set aside to drain on kitchen paper. 4. When the mackerel pieces are cool enough to handle, remove the bones and skin and discard.
